The wine is made from selected grapes from the Montejo, Pardilla, Toboganes, and Canteras plots. After a three-day cold pre-fermentation maceration, alcoholic fermentation takes place with native yeasts in stainless steel tanks, with pumping over and phenolic control. Malolactic fermentation takes place spontaneously in French oak foudres, with battonage. The wine ages for 12 months in the same foudres and is bottled without fining or stabilization. It may present natural sediment, reflecting its purity and minimal intervention.

Expert opinion

Tim Atkim thinks: Un Sueño is a new red from Pago de los Capellanes, made with four plots located at the southern edge of the Denominación de Origen in Fuentenebro, Honrubia and Pardilla, all of which are over 1,000 meters. Fermented in new barrels before aging in foudres, it has lots of structure and intensity, perfumed fig and blackberry fruit, sweet toasty oak and a little, if arguably not quite enough, of the freshness of its origin. 2026-35.

Vineyard and production

Bush-formed vineyards located in Fuentenebro, Pardilla (Burgos), and Honrubia (Segovia), south of the Ribera del Duero region, at altitudes between 900 and 1,200 meters, with 50- to 60-year-old vines planted on siliceous and clayey soils. The vintage was marked by a warm, rainy spring and a dry late summer.
Yield: 3,500 kg/ha. Three-day cold pre-fermentation maceration, followed by alcoholic fermentation in temperature-controlled stainless steel tanks and pumping over. Spontaneous malolactic fermentation takes place at low temperatures in French oak foudres, where the wine is also aged for 12 months.
The wine is bottled without clarification or stabilization, preserving its integrity and natural expression.
